We in Maharashtra use stuffing of grinded roasted peanut and salt and cook with less oil on pan like shallow fry. And for bajji we directly dip in besan and fry

We (Andhra and Telangana) don't use aloo stuffing instead simply squeeze with lemon on top and add some coriander powder/ eat with peanut chutney
