Tbh I add a little MSG when I make it too, not a ton, just a little to bring out the smokiness of the guanciale. Just because something isn't right traditional doesn't make it bad. Example (and I promise you it's amazing), is to add a little fish sauce (1-2 tsp) to your red spaghetti sauce when cooking it.

Actually I think the MSG was deserved. When the other guy made egg fried rice he drowned it in sauce acting like it was Italian food. Now Uncle Roger is drowning it in MSG, like it's Asian food.

One problem I have with cooking critics, is food a science or an art form. Science says this happens so this is the effect, very recipe based, to the crossed t's. Or an art form, I prefer this and I think the people this will be serveing for would appreciate if I did this. Try it one way and if it seems like it's missing something try a different way. I make enchiladas different than my grandma taught me and people have chosen mine over hers. It's preference, an art form.
