These protein-packed quinoa cakes are filled with chickpeas and fresh flavors. They're ready in less than 35 minutes!

Here's what you'll need:

1 15-oz can chickpeas (drained and rinsed)
1 shallot bulb, roughly chopped (about 1/3 cup)
3 scallions (or green onions), roughly sliced
2 tsp minced ginger
1 tsp sea salt, add more if desired
2 cups (275g) cooked quinoa
2 large eggs
2 1/2 TBS olive oil
