I was looking for a recipe with baked plantains for dinner today and your video popped up. Looked at it and loved your recipe. So that’s what I will make as a side dish for my dinner…. Vegan tomato stew with thyme 👍❤️ Hope it will complement my dish today 😁👍 My plantains are not fully yellow - more yellow/greenish. Would that be ok anyway?
