How do you prevent your real IP from leaking if you loose the VPN connection?

When looking for a VPN company:
How many exit servers do they have?
What type of logging do they do?
I read a few pastes linked @ irc anonymous org

If you create your own, you make your own password(if you can), if you're connecting to an external(not yours) VPN, you will probably will need to auth.
