Thepla, authentic Gujarati dish!

Thepla

Theplas are an inherent part of Gujarati meals, and are used for regular meals, travelling and for picnics! eaten with curds and chunda, theplas can be enjoyed hot or otherwise. Sometimes whole jeera or til can be added to enhance the flavour of theplas. You can even add other ingredients like methi and doodhi to this recipe, to add more variety to your menu.

Preparation Time: 2 minutes. Cooking Time: 20 minutes. Makes 14 theplas.

2 cups whole wheat flour (gehun ka atta)
1 tbsp oil
2 tbsp curds (dahi)
¼ tsp turmeric powder (haldi)
1 tsp chilli powder
Salt to taste
Whole wheat flour (gehun ka atta) for rolling
Oil for kneading and cooking

For Serving
Chunda or sweet mango pickle

1. Combine all the ingredients in a bowl and knead into a semi-soft dough using enough water.
2. Knead the dough well using a little oil. Cover and keep aside for 10 minutes.
3. Divide the dough into 14 equal portions and roll out each portion into a 125 mm. (5") diameter circle using whole wheat flour for rolling.
4. Heat a non-stick tava (griddle) and cook each circle, using a little oil, till it turns golden brown in colour from both sides.
Serve hot with chunda or sweet mango pickle.

Coming here from India Food Network dear Tarla Ji, the texture of a Thepla at IFN shows a consistency and color similar to corn tortillas made with yellow corn, but now I understand why they are this color, you add turmeric and red chili powder, totally worth making this recipe, being Mexican I bet these Thepla would be very tasty with fresh-cooked pinto beans and/or cooked Nopales(Prickly Pear pad)! tarla dalal looks distinctly tired in this ... i sensed that she was having breathing difficulty ... she was obsessed with learning vegetarian recipes from across world and teaching them ... she changed vegetarian cookery in india forever and also gave vegetarian cookery a place of respectability and pride to it in world with her first book
