Picnic At The Palace - Former Royal Chef Shares The Perfect Picnic

The Queen has opened the Buckingham Palace gardens to the public for the first time. People can now enjoy a picnic on the palace lawns. This playlist shares authentic dishes/recipes from Royal Garden Parties that I prepared in the Royal Kitchens over 11 years so that you can not only have a picnic tea at Buckingham Palace but an authentic one too.

Scotch Eggs

1 quart oil for frying
4 eggs
2 pounds Italian pork sausage
1/2 cup freshly chopped cilantro (coriander)
1/2 cup chopped peanuts (optional)
salt and pepper
2 cups panko
1 cup all-purpose flour
4 eggs, beaten

Preheat oven to 350 degrees F (175 degrees C). Heat oil in deep-fryer to 350 degrees F (175 degrees C).

Boil the eggs in saucepan for about 10-12 minutes, remove from heat, place in ice cold water until the eggs are completely cold. Peel the eggs and dry with paper towel.

Mix the sausage meat in a mixing bowl with the chopped peanuts (optional) and chopped cilantro. Season with more salt and pepper. Flatten a small ball of sausage and make a patty to surround each egg. Very lightly flour the sausage and coat with beaten egg and panko ( or breadcrumbs) to cover evenly.

Deep fry until golden brown, or pan fry while making sure each side is well cooked. Bake in the preheated oven for 6-8 minutes.

The word "picnic, " is one of the happiest in the English language. It is a sad person, indeed, who does not feel happy about going to a picnic. I can only imagine how a formal royal picnic would go. It would probably not be as loose or free wheeling as one of mine, but I'm sure that would be offset by your great food and beautiful private surroundings. The closest I've ever come to that kind of formal picnic occurred for me when my wife and I went to England the first time. We wanted to see Stonhenge, so we hired a car in London and I arranged for a picnic basket from Fortnum and Mason's. I had no idea what was coming, but when we reached the site, I learned one must bring a VERY large blanket to indulge in such a feast! I wisely purchased an extra bottle of Champagne which we enjoyed while we communed with pagan spirits on the Salisbury Plain. I remember it like it was yesterday, but it was actually forty years ago!

We having the cherry blossom blooming everywhere around this season so I am having a picnic almost everyday and this menu is so wonderful. Thank you for sharing. I enjoy a cup of tea with so lovely Wedgewood cup and makes me feel so filled with pleasure living

I got to tour the palace 11 years ago. Well worth the hefty admission for the the George IV art collection if nothing else. Had a cream tea in the cafe with my family, overlooking the garden which was firmly off limits with a horse guards regiment on duty in case any tourist felt adventurous. I still have my souvenir apron. In fact, it's my only apron.

It’s funny how scotch eggs are so different the world over. In Pakistan we grew up having scotch eggs filled inside a boiled mashed potato with some green chutney an egg inside covered with more potato dipped in flour, breadcrumbs, eggs and then fried until crispy Golden brown! Absolutely delicious!

I've always wondered how these were made! I'll try this. FYI, for those with gluten intolerance, you can also find Japanese rice flour Panko, usually at Asian markets.

I honestly like the egg yolk molten, and eat them for breakfast, so it has to be constructed a different way, but I also love the differences of making scotch eggs!
