Cabin crew here: It varies from aircraft to aircraft. High-low chime usually indicates a regular station to station call, but all other calls can be different. Double high can be a call from any station to the purser, tripple high-low chile can be an emergency call from the flight deck or a regular purser call, tripple low chime can be a smoke alarm, high-low with a flashing light at the ceiling panel could be a purser call, high low could also indicate a conference call. Single chimes usually indicate a pax call. I could go on, but all that matters is, that every aircraft has different calls and you shouldn’t freak out, just because you hear a specific or unfamiliar chime on an aircraft. If in doubt, just ask the crew.

The ringing is airline/country/airplane specific. It isn’t standardized across all airplanes

Cabin Crew here (Ryanair)
Hi-Low (1) is Pilots calling crew - for drink / toilet normally
Hi-Low (2) Cabin Crew calling each other, normally for duty free
Call bell, Passenger wants a drink
3 times call bell means emergency, normally medical (you’ll know by the PA’s)
If Pilot makes PA (Actual emergency (the reason for the 6-8 week training we do))

Got this one wrong, chap. That “Hi-Lo” chime is the sound of the crew. The repeated “Hi” chime is someone’s kid playing with the call bell, someone trying to turn on a reading light, or someone in the lavatory pressing the wrong button to flush the toilet.

Fun Fact
If you jump out at that speed your body gets ripped apart into 3409 pieces. Fighter pilots when they eject, even with special suits still can lose their legs. One pilot had his helmet fly off and when he hit the ground his head was the size of a watermelon and lost his vision and legs.
That is for those who think jumping off a passenger plane would save your life.
