As a nuclear engineer, this is the best explanation on boiling I’ve seen. A summer is what we call, “nucleate boiling” because the bubbles must form on a nucleus or wall, whereas a full boil is departure from nucleate boiling, this is also Called bulk boiling. It’s interesting there is a difference between full boil and roaring boil though

Steam appears: 140 F Small bubbles appear: 170 F
Small bubbles grow frequent: 180 F One spot in pot begins fizzing: 190 F
Multiple fizzing bubble flows appear: 200 F Surface of water begins to churn: 205 F Rolling boil: 212 F

What is the fourth stage used for?
All my life I used lazy boiling for slow cooking soups. Now I'm trying stage four in a watery soup. Don't mind if all ingredients fall apart.

There’s also the level at which steam becomes dry, but that’s more about steam locomotive superheaters than cooking.

Showed this video to my partner cause they've been "boiling" eggs that come out straight up raw when they're done and turns out they've been simmering them before removing them from the pan 😭😭😭
