Have been thinking about my mistakes… learned to can as a teen in the 70’s. Picked it back up a few yrs ago. Things have changed. I remember following the Kerr book (used Kerr jars and old Mayo jars) for time and pressures; so that was not a mistake.

Never took rings off, stacked jars of food in the cabinet, debubbling was not a thing.

I picked up some from mom and grandmother but mainly remember reading the old book (which I recently found, minus the cover).

The workaround for processing items that have extended prep time is to split up the prep from the canning. When I can something like pork butt, I will often cut it up one day, stick the chunks in a large covered bowl (or big baggie) in the fridge, then can the pork the next day. While the pork is processing, I can be cutting up chicken (or a veggie) to process next. It can be a lot more efficient (and less stressful) than trying to do everything all at once. It works great for soups too! Make broth, while the broth is simmering cut up the veggies and put into a bowl, then cool the broth and stick it in the fridge overnight. The next day pull out the broth, skim off the fat (or not) and make your soup on the stovetop, and can as you normally would.

I've canned for 50 + years and this is a great reminder. I have my canning recipes I do every year printed out and tape it to my cabinet for reference no matter how many times I've done it. Memory is not the best tool for my canning. Thanks for the reminder of these things.

I love that App!! It's great to help to keep you on track. The biggest mistake I made when I started canning was to can too much of something that I didn't even know if I would like. Turns out my pickles were complete mush. What a waste, I canned over 30 jars of that mush!! Live and learn

I've made all these mistakes. I thought it was as simple as putting what you want in a jar, no matter what it is, however you wanted to balance out the ingredients and cook it in a water bath for for 3 to 4 hours, and as long as it sealed tight, you were good to go. Throw it on the shelf and it's good for a few years. Thank you so much for this video. Because now i know i need to do more. I had no idea. And if one of my grands or children or mother died because of me, i wouldn't be able to go on!!!! Thank you, thank you, thank you!!!! Where do you find these tried and true recipes?

I make notes in my canning books (for instance) as to how many jars a "dishpan" of product will fill, and how long it takes, from start to finish, to do a project - because I forget from year to year.

As a new bride canner in 1979 the biggest mistake I made was to use a metal table knife to debubble. I got quite aggressive with it to get more green beans in the jar, & broke jars clanging metal against glass. They couldn't withstand the pressure & it took me a while to figure out what I was doing wrong.
