How to Cook Branston Pickle - English Ploughman's Pickle 🇬🇧😋

In this video I demonstrate how to cook Branston or English ploughman's pickle, the perfect pickle for a ploughman's lunch or a doorstep cheese sandwich. Branston pickle is as British as fish and chips!

The thing that distinguishes Branston pickle from other English chutneys is the crunchiness of the diced vegetables in the pickle. In this recipe I add fruit and vegetables in three stages to ensure a nice crunchy texture in the finished pickle.

Ingredients:

500g swede/rutabaga, diced.
200g carrots, diced.
6 apples, diced.
2 medium sized brown onions, finely chopped.
2 tomatoes, diced.
100g raisins/sultanas/diced dried prunes.
1 medium sized courgette/zucchini, diced.
500ml malt vinegar/pickling vinegar/rice vinegar.
4 tbspns dark muscovado sugar.
4 tbspns dark soft brown sugar.
12 tspns cinnamon powder.
1/4 tsp grated nutmeg.
Salt and black pepper to taste.

Method:

As shown in the video!

Hi Pete me again. This looks interesting but it is really weird because I was speaking to a friend of mine (on portal....social distancing) about Branston and spam sandwiches. Spam very trendy now. That brought us round to me asking if he remembered
PAN YAN pickle. That was way back and it had a sort of slight Indian influence in the flavour. I think it was squeezed out of the market by Branston and totally disappeared. The recipe was then found by Baxters the soup people and they now market it under the name of Alberts Victorian Chutney (in all supermarkets) The Victorians were big on curry flavours. It's only very very very mildly curryish. Good name though and play on words. Albert and Victoria. Nobody seems to remember Pan Yan Just wondered if you did..

What a refreshing treat for sandwiches, cold meats and even added to salads as the dressing. Nice and 😋 for lunch. In fact I am having a beef pattie and a cherry tomato 🍅 salad drowned in dressing for lunch. ☺

Hey Pete! I love, love, love this one. That's a proper chutney. Very, very nice. Also, I love making relish/salsa/chutneys with tomatoes and then a crunchy fruit or even a soft one. I like the idea of adding a raisin, that's a good one. Or prune. I love prune. Grew up eating them. Very, very nice. For sterilizing jars, I put mine in my air fryer or big oven. Works really well. I do that with kraut. Though, I keep the kraut in the fridge once I'm done making it. Anyway, I loved this video. Well done. Like the addition of rutabaga/swede. Cool idea. Happy Eating!

Branston Pickle, slapped on a nice thick cheese butty! I miss it, it was a common feature when we lived in the UK all those years ago. But hey, now I have a fantastic recipe to make it. Yay! Great video Pete, loads of love xxxx

Pete, here in Bangkok, Branston costs a wallet and a half so your recipe is excellent.
By mischance, I ordered online 5 litres of malt vinegar so I'd like to now make pickled onions. Like they used to be in pubs. CRUNCHY. My attempts in the past have always gone a bit mushy after a while. I've also never succeeded with an HP Sauce imitation either. Any ideas? Brian.

Hi Pete, not a fan of chutneys but it was still a pleasure to watch you make it. Can't wait for the next one!

Thanks Pete. When I first moved here to Thailand decades ago I had to find a Branston recipe because a jar cost (and still does) a wallet and a half. The list of ingredients was about an A4 sheet. It took hours chopping ALL the ingredients into one eighth of an inch cubes. I must try yours now, looks good. The other thing I searched for but could't find was H.P. sauce.
