This is the best thumbprint cookie I’ve ever made or eaten! The cookie is a wonderful cream cheese crust, like a little pie but softer. The dough is a dream to make and work with. Thumbprint the dough balls, then partially bake, then thumbprint again. Add apricot, raspberry or ANY jam you love to the little wells, then finish baking them off. They stay nice and tender in an airtight container for a good week. Cookie swap favorite!
