This simple cultured vegan butter is a creamy, tangy, delicious dream on toast! With only 2 ingredients and homemade charm, you may not buy vegan butter ever again! Maybe 😁
Without any added emulsifiers or special ingredients you can't get at a regular grocery stores, this fluffy plant-based spread is not exactly like butter. It's more like a cross between whipped cream and cultured butter. So better than butter 😉 Anyways, you'll just have to make it to find out for yourself!

One time I tried to make yogurt from coconut milk. It had too much water so as it fermented it didn't get thick enough. I got frustrated and put it in a closed mason jar in the refrigerator to deal with it at a later time. That later time was several months later and it turned into a cultured cheese similar to blue cheese that was very spreadable🙂

My InstantPot doesn't have a yogurt settling, but I just sprout quinoa to make rejuvelac and then use that to make butter. Tastes as good as Miyoko's to me and it's like 1/10 the price to make. Definitely give it a try if you haven't. It's not as hard as it seems at first and once you get the hang of it, it's easy. Great as a gift for vegans too! Make up a huge batch and make a couple different compound butters. Add a sour dough loaf or some high quality bagels and you're good to go!

Surprisingly, the canned coconut from Dollar Tree has no gums or other thickeners. It's a bit thin (because it's from the Dollar Tree) so you can't use it for high-fat applications like this. But if you want something you can use in curry and smoothies, it's good. It's a brand called Azul.

Yakult! My wife grew up drinking those, so my kids did, too. I have some in my fridge now, and I drink one occasionally.

i get those little probiotic red topped bottles sometimes at my local korean store. but they're made with wtih milk and i'm moving away from dairy ... this certainly is a happy accident and good timing!

I am glad you saved the whey. I use mine to puree soaked cashews for instant vegan cheese. It's also good for lower sodium fermented vegetables. 👍

I use vegan actimel per 1l of coconut cream from carton. Put it on sourdough starter setting in my breadmaker. Once it's sour to my taste it goes in the fridge and I make agar agar and starch kind of cross between jelly and custard. Mix all together and a weeks worth of yogurt is made.

Butter and other creamy things are always my favourite. 🤤 I also a huge fan of yogurt, kefir or cheese, things that have microbes. 😅 Can you make a tutorial of how to make a vegan Greek yogurt, Mary? There are many recipes using cashews, almonds or full-fat coconut milk but I'm curious about more sustainable crops like peanuts, hemp hearts or oats. It would be a good idea if you show us how to ferment any plant-based milk deliciously!! Home-made, affordable and nutritious Greek yogurt is my dream. #reciperequest

Yay this is exactly how I make butter and my family loves it. You should have it with this Indian flatbread called paratha! It's so good.

I tried making a clarified butter (ghee) from this but it wasn't very satisfactory. I generally make my own coconut milk for the butter so while at it I'll try adding in tahini and make it, maybe?

I use the canned coconut cream. I can still get it with no additives, I hope that continues. I got vegan yogurt starter and hold back 1 cup for the next batch. It’s real thick and Greek yogurty. I’ll try your way for butter though, it sounds good, thank you.

This reminds me of lebneh a Lebanese strained yoghurt. Middle Eats just did a video on it and tried it with coconut yogurt.

I noticed your lid cracked on your Pyrex bowl. I had the same issue (plus staining) so I looked around for one-to-one silicone replacements because I was fed up, and found some from a company called “Sophico”. I love them, personally. Definitely not cheap (like $8 a piece), but they appear to be practically indestructible. 10/10 would recommend them. I think you can find them on Amazon if you’re interested. 😊 Only complaint is that they’re a bit grippy. Can be an issue when stacking things in the fridge if you’re not careful.
