After working briefly at a sushi restaurant I can attest that wrapping the roll with plastic after the maki is molded is not necessary; I was taught to wipe the knife with a damp towel in between each cut.

Also, there's a method in which to properly cut the sushi; you want to angle your knife at about 45 degrees, cutting inward toward the maki proceeded by an outward stroke. Basically two clean strokes of the knife; sawing into the maki is improper.

Do Not put plastic wrap on your roll before cutting it, you risk contaminating it with that plastic. Just make sure to have a really sharp knife and wipe it with a damp cloth when you get too much starch on the sides of the knife.

use less rice by only using half of a sheet of nori. as you can see in the video, with that amount of filling you can roll it over and have it be a complete roll. or you could stuff this one super full futomaki style because you're using such a large sheet!

My family owns a sushi restaurant and they never ever used plastic wrap on shit like that. As long as you have a sharp enough knife and wet the knife it is fine cutting without the plastic. Plastic is probs good for beginners though.
