Jamaican parentage here. Sa.e thing. I also ferment the pineapple skin with apple and make pineapple/apple cider vinegar. Excellent for gut health and fat loss.

Former Trauma 1 nurse here. Pineapple skin contains bromelain which is highly beneficial in my ways. One example is the rx medication NexoBrid. It is a cream that is made from extracting the bromelain from the core n stems of the pineapples. It is being used on burn victims. The bromelain enzyme eats away the burnt dead skin n actually knows when to stop when it gets to the healthy layer of skin. It allows severe burn victim's skin to heal without the need for skin grafting. It's quite amazing!😊

Fantastic idea, just make sure to buy organic pineapples because most pineapples coming into the USA are spayed with weedicides like Glyphosate, Diuron and Grammaxene; pesticides like Chlorpyriphos and Imidacloprid; fungicides like Hexaconazol and Zineb are of wider applications in heavy dosages.
