Olive oil biscuit (paximadia) recipe is here!
Ingredients
1/2 cup extra virgin olive oil (light) @cobramestate
1/2 cup sugar
1 tablespoon tsikoudia/raki or brandy @thegreekprovidore
1 teaspoon cinnamon @gourmetorganicfoods
1/2 teaspoon clove
Pinch of salt @murrayriversalt
1/4 cup freshly squeezed orange juice
1/4 teaspoon baking soda
1 teaspoon baking powder
250g plain flour plus extra for kneading
Method
1. Place the olive oil, sugar, alcohol, spices and salt in a bowl and mix well until fully incorporated. Combine the orange juice and baking soda, until it fizzes up, then add to the bowl.
2. Combine the flour and the baking powder and mix by hand until you have a soft dough that is easy to shape. You may need a little extra flour to kneed together or to dust the bench with if it’s overly sticky.
3. Divide the dough into two equal parts and shape into logs, about 4 cm in diameter. Place them on the tray and score them into slices with a sharp knife, but not cut right through to the bottom. The dough should still remain in tact as a large piece.
4. Bake at 180 ° C for 25 minutes or until the biscuits are a golden color.
5. Let the biscuits cool slightly and then with a sharp knife separate the slices from each other and spread them side by side on the tray and bake them again at 150 ° C for 25 - 30 minutes or until they become darker in colour and crunchy.
6. Leave the biscuits to cool on the tray. Store in an airtight container.
