It's (in my experience) usually made of snow crab, shrimp, and fish, as a cheaper alternative to straight up crab. I'm allergic to shellfish, so when I get imitation crab I have to look at the ingredients every time. I've only found one brand that makes theirs without any shellfish. I think it's a blessing that I didn't find one until recently, since it's now been so long I don't remember what real crab tastes like, and can't be disappointed by any differences (:

Imitation crab is basically blend up fish discard and cooked to simulate crab meat

(In England) Imitation crab meat actually doesn’t contain crab, it usually uses white fish meat and flavourings. The red food colouring to give the top that colour pop.
