We’d never tried food from the Côte d’Ivoire (Ivory Coast) … so we had to pull up to Sylla in Harlem. The owner was hyping up Ivorian cuisine against every other African nation we could name but was it truly as amazing as he says?

Essentials:
- Sauce Aubergine: A stew made of eggplant, beef, and turkey neck, that tastes smokey and savory. Best enjoyed with fufu.
- Sauce Graines: A darker stew than Sauce Aubergine, it’s made with palm sugar. I consumed it over white rice.
- Whole roasted fish with plantains: A Righteous experience. I highly suggest you pair this Sylla’s homemade scotch bonnet hot sauce.

Sauce graine uses red palm oil and not palm sugar bro. As for the carb at the end, it’s definitely not white rice but attieke, which is basically couscous made of cassava
