Here's a delicious recipe for homemade coconut cookies:

Ingredients:
1 cup (226g) unsalted butter, softened
1 cup (200g) granulated sugar
1 cup (packed) light brown sugar
2 large eggs
1 teaspoon vanilla extract
2 ½ cups (320g) all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 cups (160g) shredded sweetened coconut
Instructions:
Preheat the Oven:
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
Cream the Butter and Sugars:
In a large bowl, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy. This usually takes about 2-3 minutes with an electric mixer on medium speed.
Add the Eggs and Vanilla:
Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract until fully incorporated.
Combine the Dry Ingredients:
In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
Mix the Dry and Wet Ingredients:
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix the dough.
Fold in the Coconut:
Gently fold in the shredded coconut until evenly distributed throughout the dough.
Shape the Cookies:
Scoop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
Bake:
Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown. The centers may still look slightly soft, but they will firm up as they cool.
Cool:
Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Tips:
For an extra coconutty flavor, you can toast the shredded coconut lightly before adding it to the dough.
