Souvlaki is traditionally made of pork. Kebab is mainly lamb. Chicken souvlaki is a novelty, it didn't exist until 50 years ago, as it came along with the diet trends. Also, the souvlaki pitta is different than any other pitta

Fun fact (maybe) in Athens they call it Kalamaki and up north, Thessaloniki we call it souvlaki. That’s the meat on the stick.
The other thing is up north the gyros are double the size I don’t know why😂.
