In episode 6 of Wild Edibles Test Kitchen, Sergei forages for lemon balm (Melissa officinalis), as well as broccoli greens and Swiss chard, and turns his harvest into a healthy and fun sweet treat. When the weather gets hot, it's officially popsicle season!

~~~~~~~~~~~~~~~~~~~~ 🌱 RECIPE 🌱 ~~~~~~~~~~~~~~~~~~~~~

Green Smoothie Popsicle with Lemon Balm

1/2 bunch lemon balm
1/2 bunch broccoli greens
1/2 bunch Swiss chard
2 cups frozen strawberries (with greens)
2 small mangos (peeked and pitted)
2 ripe bananas (peeled)
8-10 dates (pitted)
1 quart water

Blend all ingredients in the blender until smoothie (2-3 minutes). Fill your favorite popsicle molds with smoothie and freeze for 6-12 hours. Enjoy popsicles on a hot day. And... Don't forget to drink you smoothie!

Yields: 4 popsicles + 1 1/2 quarts of green smoothie

😮 I LOVE your book and the knowledge you invested in giving us the opportunity to forage in safety! In times such as these, freezedryer has been busy *continuously placing the herbs, etc. in powders, teas, and whole portions that can be utilized * (or used for bartering) I moved to a small town and on the riverbank foothills of the Appalachian. Visually, I can recognize the GOOD foraging thanks to you 😊 p.s. BIGFOOT was noted to be around these hills! 😅🤣

I know from experience that lemon balm is absolutely amazing for cold sores! I made a quick little concoction back when I didn't know what I was doing... I put lemon balm and thyme in some coconut oil and warmed it up then I used it immediately at first sign of a cold sore and it literally was gone in 2 days instead of 2 weeks like usual ❤ MOTHER EARTH REALLY DOES PROVIDE EVERYTHING WE NEED ❤

Would totally eat this! I’ve been eating prickly lettuce since I was a kid. My grandma would pick the young leaves, as well as dandelion and miner’s lettuce for salads. Delicious! And that bacon hack - brilliant to use tortillas for absorbing the grease.

Nice idea. Thank you. Now, in case you don't know, buy bananas, peel, place one layer in gallon zip lock bags, freeze. Banana popsicles. Wrap in paper towels when holding. If you do not use fast enough, put in smoothies.
