Soft and Chewy M&M Cookies
Ingredients:
2 cups all-purpose flour
1 tablespoon cornstarch
1 teaspoon baking soda
½ teaspoon salt
¾ cup melted butter
¼ cup granulated sugar
¾ cup brown sugar (packed)
1 large egg
2 teaspoons vanilla extract
¼ cup mini chocolate chips
1 cup M&Ms, plus more for decorating
Instructions:
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
In a medium bowl, whisk together the flour, cornstarch, baking soda, and salt. Set aside.
In a large mixing bowl, whisk together the melted butter, granulated sugar, and brown sugar until smooth. Add the egg and vanilla extract, mixing until fully incorporated.
Gradually mix the dry ingredients into the wet ingredients until just combined. Stir in the mini chocolate chips and M&Ms until evenly distributed.
Cover the dough and chill in the refrigerator for 15 minutes.
Using a cookie scoop or spoon, drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
Bake for 9-11 minutes, or until the edges are lightly golden. The centers may look slightly underdone, but they will firm up as they cool.
As soon as the cookies come out of the oven, gently press extra M&Ms on top for a decorative finish.
Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
