How to Make Arctic Char en Papillote - Episode 98
Ingredients
Arctic Char (or salmon) – 6 oz. per portion (150 g)
Carrots – ½ carrot per portion
Celery – ½ stalk per portion
Shallots – ½ t. per portion
Fresh Rosemary – or thyme
Kosher Salt + Pepper
Extra Virgin Olive Oil – 1 t. per portion
Soy Sauce – to taste per portion
White wine – 1 t. per portion
Parchment paper – you could substitute aluminum foil.
Lay out a piece of parchment paper for each portion.
Place fish in middle of paper.
Add shaved carrots, celery and shallots.
Season with kosher salt and pepper.
Add olive oil, soy sauce and white wine.
Fold paper into a pouch and twist the ends.
Bake in 400F (200C) oven for 15 minutes.
Serve in pouch!
