Herb and Garlic Grilled Eggplant

This year I harvested so many herbs! Some of them I dried and use them up as dried herbs to naturally flavor my dish. You can dry your herbs by hanging them or placing them in the oven with just the light on (do not turn the oven on). Depending on the humidity, it might take a week or 2 to dry.

The eggplant has a bitter taste and to remove the bitterness it helps to season them with salt first and allows it to sit for at least 15 minutes. When the eggplant starts to release the moisture, dab a paper towel to wipe the moist.

By doing this, can we later place them in jars with olive oil to preserve them for later usage ? Great video ! Thanks.
