Peach and beet feta cheese salad!

I don’t know about you, but I’m still soaking up all the summer produce I can! This peach and beet salad with tangy feta is the perfect combo of sweet, earthy, and fresh. We paired the salad with baked cod and it was so delicious. Enjoy!
Peach and Beet Salad with Feta Cheese
Ingredients (4 servings):
- 2 peaches, sliced
- 1 cup cooked beets, sliced
- 1 cup cherry tomatoes, sliced
- 1/4 red onion, sliced
- 1/4 cup feta cheese crumbles
Dressing:
- 3 tbsp lemon juice
- 6 tbsp olive oil
- 2 tbsp fresh dill, chopped
- Salt and black pepper, to taste
Instructions:
In a large bowl, whisk together the lemon juice, olive oil, chopped dill, salt, and black pepper until well combined.
Into the same bowl, gently toss the sliced peaches, beets, cherry tomatoes, and red onion together and toss to coat all the ingredients evenly.
Sprinkle the feta cheese crumbles over the top of the salad.
Serve immediately or chill for a few minutes before serving to let the flavors meld.
