I use apple for pork also. Only thing different i do is put a little apple juice in the drip pan to infuse moisture and a little mire flavor. Good job.

I would suggest smoking at 225 or 250 until the internal temperature reaches 165. You'll come out more juicy because the natural casing will not crack and let out moisture and juices.

Applewood is great for pork and chicken I like pecan as well also Cherry. Any good fruitwood
