I just got a Skagen Gen 6 (Fossil guts) and yes, had to turn down a lot of the "smart" features and using a mild face that has the bare minimum for what I need. Still let's me deal with texts and calls, and it was half price so it will get me by until fall and I'll see if the Pixel 2 is any good. Really wanted the TicWatch Pro 5 but I just can't go with that company due to the cost and the total lack of support.

Agreed. In fact all the smart watches with a full fledged operating system, their battery usually lasts for a day. One thing you can do is apply a simple watch face, that also doesn't help much. So, as of now the only option is to wait until technology gets a massive upgrade.
