I wonder if you’d get a slightly darker color if you added the coffee to barely boiling water and then let it cool to the desired temp before the dunk. From a coffee drinking standpoint 175f makes for a weak light colored brew. If I had to guess I’d think you’d extract more color from the coffee by soaking the grounds at a higher temp

1)Wrap the shoes in some sort of filter cover (pillow case) to keep the coffee grinds out or use coffee grinds in a filter bag 
2)Use instant coffee (ones that melt in hot water)
