This is always a winner, different than Sunday Sugo and vodka sauce always hits hard 🤤

INGREDIENTS
Guanciale (cured Pork Cheek)
1 Jar Red Sauce (passata)
3 Cloves Garlic
1/2 Large Onion
500g Pasta Noodles
2 Tbsp Olive Oil
Pecorino Romano

PREPARATION
-All the ingredients dice chopped, grated ready next to the stove.
-Guanciale cut directly into the pan.
-Heavily season water will salt.

COOK
-Cold pan rendering out the fat from the pork and set crispiesaside.
-Cooking the onion then the garlic in the rendered guanciale fat.
-Once nicely toasted, adding the tomato sauce.
-Let simmer to reduce so it’s not raw adding, handful of Guanciale back in.
-Cook the pasta before 2 minutes before package al dente.
-Finish cooking pasta in the sauce so it can continue to cook and absorb sauce.
-Finished with the pecorino and chili mixture
-Topped with the crunchy guanciale, black pepper and chili flakes.
