JULIA✌ ... Please try salting your Zucchini first for about an hour then rinse salt off and squeeze squeeze squeeze out the excess juices... it gets the water out and leaves the Zucchinis crunchy texture even after cooking tho won't go soggy fast and who want all that extra water in thier baked dish !!) I learned this from an Asian friend ... and it really works ... just trying to help 🤟😋✌

This is Erick’s wife Tabitha. I made the Enchilada casserole, one with green enchilada sauce and chicken and one with red enchilada sauce and beef! Both were a big hit! Going to try the chicken stuffing one this week!
