Sev is an essential ingredient in popular chaats. This delicious snack can be prepared easily at home. Sev or Shyaavo is a crispy chickpea noodle which is eaten as a standalone snack, or is used to garnish chaats, upma (uppittu), poha etc.
Dough for the sev should not be stiff, as it will make it too hard to press. It shouldn't be too soft with water content either, as the sev becomes shapeless and will fall in lumps.
Be careful when you press the sev maker over the hot oil, always hold it half a feet above or more.Hot steam comes up as soon as you press the dough into the hot oil which might result in hand burns unless precautions are taken.
I have the mould with tiny holes for making sev. If you want thick sev then you have to use a disc with bigger holes.Use fresh oil for frying. You can store the sev in an airtight container for a month under room temperature. Do not store this in the refrigerator.
