Hello Chris. I just subscribed to your channel maybe 4 or 5 years back. Living in Florida, I still get a lot of Caribbean food. I do mostly Jamaican food since I'm from there but they have stores that sell all kinds of Caribbean or tropical foods so I get a little. The only thing though, I never got a chance to go visit some of the other islands. I was going to but things got difficult. The outlook looks bright for Caribbean food though.

Do you make ‘Black Cake’?
My dad (Jamaican), famously made it from Windrush era in UK… I make Black Cake from 1st October, UK GMT.
I feed the cake until Christmas and serve.
My trick is I don’t use narsty ingredient dem! Like raisins, etc… I use MY favourite nuts… walnut, pecan, hazel… and soak sultanas and plum fruits in rum or brandy…

My cake gets lapped up at Christmas!

Always add the things you love and not the things you hate or dislike for such an expensive cake!

I think my dad would be proud!
