America’s Test Kitchen Recipe
Ingredients for the cake:
2 cups A.P. Flour
½ cup Dutch processed cocoa
½ teaspoon salt
1 teaspoon baking soda
8 tablespoons unsalted butter (1 stick) softened
1 cup light brown sugar
1 large egg
1 teaspoon vanilla extract
1 cup buttermilk
Ingredients for the filling:
12 tablespoons unsalted butter (1 ½ sticks) softened
1 ¼ cup powdered sugar
1 ½ teaspoons vanilla extract
⅛ teaspoon salt
2 ½ cups marshmallow fluff
Directions for cakes:
Preheat oven to 350 F
Line 2 baking sheets with parchment paper
Whisk together flour, cocoa, salt and baking soda. Set aside
Cream softened butter with the brown sugar, medium speed for approx 4 minutes, until light and creamy
Add egg and vanilla and combine
Alternately add dry and wet. Start with ⅓ mix of dry; half of the buttermilk, ½ of leftover dry, remainder of buttermilk and finish with dry. Finish by hand mixing only until no more streaks of flour remain.
Spread by ⅓ cup full onto baking sheets. Only 6 per sheet and 3 inches apart; as they will spread.
Bake 15-18 minutes, rotating halfway through. Cool completely on pans
Directions for the filling:
Cream together the butter, powdered sugar, vanilla and salt.
Add the fluff and beat until combined. The mixture may thin out slightly but will solidly nicely in the fridge.
Cover and refrigerate for at least ½ hour.
Spoon ⅓ cup onto one cookie then press another on top until you can see the filling!
