I LOVE rhubarb! Being from the Pacific NW, I grew up with this as a regular summer staple. My husband, being a MD native, had never tried it. I mentioned this to my Grammie, and she promptly sent SEVERAL jars of jam, pie filling and my favorite rhubarb pickles! It's an underappreciated garden vegetable.

If grown by seed (which I have never done) you may have to wait 3 or more years before picking. Most rhubarb is transplanted using roots from a mature plant. Depending on the size of the root you may be able to pick after just a year or 2. When picking you should leave 1/3 of the stalks at harvest, unless it's the end of the year as in the case in this vid where you can take all the stalks.

My gram use to put the rhubarb in jars and we would have it all winter. It grows pretty big here in Maine. Great video!!! Thanks a lot Yankee Prepper!!!

Wow- my wife and I are the only ones in our neighborhood that grow rhubarb. She freezes it and makes great pies with it through the winter. It also makes good wine. We always have too much because it is a big patch, thanks for the extra recipe.

Great recipe...thanks for sharing this! It inspired me to make rhubarb jam for the first time yesterday by salvaging the last of my stalks that weren't going bad. Made two batches for the freezer and it is delicious!!! I think this will be a new family favorite of ours. Thanks again for another great video.

I have so many more recipes to share, I think it would be a good idea to put them all down in a book. I will try and work on it.

I have heard that a similar process is done to make "rhubarb martini's" and it's getting to be a very popular drink.

Really appreciate your introduction about how important Rhubarb was to the past generations. If people would invest themselves into food like this, the cupboards and store shelves would be void of many synthetic vitamins, which cost to much and add very little value to ones health.

I harvest rhubarb in the spring for the most part. I keep picking, cubing, and then freezing. I like to use a close recipe to this one except I add apples instead of pineapple and no jello. I call it spring tonic since it tends to clean internal human pipes pretty well.

Rhubarb grows in the same patch forever. We had the same patch for my entire life (32 years) and the previous owners had planted it over 20 years ago when we bought the house from them.

Drizzle a bit of that on some cheese cake is some fine eats. My mom made a similar recipe. I use to pick the stocks, dip them in sugar and eat them raw from her garden. Thanks for sharing...and the history

Maybe I should put a disclaimer on all my questions that I answer. that I would not harvest the first year since the plants are generally not strong enough to support harvests the first year.

I have a steamer juicer and process my excess rhubarb into a juice that can be frozen. It is great with water and sugar to taste or serve over ice with 7-up as the sweetner.

If you are planting from roots you should begin getting healthy, harvestable stalks very quickly that same season. Here in WA it will grow in just about anything as long as it isn't starved of water. I've literally taken excess roots that I didn't think were the best for planting and thrown them over on top of my compost pile and they were blooming with big mature stalks that same summer.

Never waste a bullet. Gather some heads up afterwards and put them in fish tanks so you can stair at them while you are drinking scotch.
