Boxed Cake Mix Pumpkin Roll
- 3 eggs
- 2/3 cup pumpkin puree
- 1/2 box of Spice Cake Mix (about 1 2/3 cups)
- powdered sugar for dusting and garnish
Frosting
- 1-8 oz package of cream cheese at room temp
- 1 cup powdered sugar
- 2 Tbls butter
- 1 tsp vanilla
- preheat oven to 375 degrees F (350 for dark or non-stick pans)
- line 15x10x1 sheet pan with parchment paper and spray w/ non-stick spray
- beat eggs for 2 minutes until thick
- beat in pumpkin until well combined
- gradually add cake mix and beat 1 minute
- pour batter into pan and spread to corners
- bake 10-14 minutes until spongey
- loosen edges from pan and turn out onto a clean towel sprinkled with powdered sugar
- remove parchment paper and gently roll the towel up with the cake starting from the short end
- let cool for 1 hour
- while cooling combine cream cheese and butter and beat until smooth
- add powdered sugar and beat until light and fluffy
- add vanilla and mix well
- unroll cake once completely cool and frost to the eges
- carefully roll back up, removing the towel as you go
- wrap TIGHTLY in plastic wrap and chill before serving (this will bind together any cracks you may have)
- sprinkle with powdered sugar and serve
2 - Minute Microwave Box Cake Mix Fudge
- 2 cups of spice cake mix
- 2 cups of powdered sugar
- 1/2 cup butter
- 1/4 cup + 1 Tbls heavy whipping cream
- 1/2 tsp pumpkin pie spice
- 1/2 cup white chocolate chips and candy corn to garnish
- combine cake mix, pumpkin pie spice and powdered sugar in microwave safe bowl
- add 1/4 cup of cream and butter and stir only a couple times
- microwave for 2 minutes
- remove and stir thoroughly
- add white chocolate chips and 1 Tbls of heavy whipping cream and stir again
- press into greased or parchment lined 8 x 8 pan
- cool for 1 hour before serving
Pumpkin Pecan Dump Cake
- 1 can pumpkin puree (15 oz)
- 1 can evaporated milk (12 oz)
- 1 cup packed brown sugar
- 3 large eggs
- 2 tsp pumpkin pie spice
- 1 box spice cake mix
- 2 sticks of unsalted butter melted (1 cup)
- 1 cup chopped pecans
- preheat oven to 350 degrees F
- grease a 9 x 13 pan
- in a large bowl combine the pumpkin, evaporated milk, brown sugar, eggs and pumpkin pie spice
- whisk until combined and pour mixture into greased pan
- sprinkle cake mix powder on top of batter evenly (don't stir!)
- sprinkle pecans evenly over cake mix (don't stir!)
- pour the melted butter over the cake mix and pecans evenly (don't stir!)
-bake for 45 - 50 minutes until the eges are browned and the center is set
