Nombu Kanji

Ingredients:
50 ml coconut oil (for cooking)
1 cinnamon stick
1 star anise
4 cardamom pods
200g onion, chopped
2 tbsp GG paste (ginger-garlic paste)
2 tsp turmeric powder
200g tomato, chopped
5 green chilies, slit
Salt, to taste
1 tbsp chili powder
100g mutton (or your choice of meat)
50g moong dal (yellow lentils)
100g coriander leaves, chopped
100g mint leaves, chopped
2 liters water (for cooking)
250g broken basmati rice, soaked
90 ml (coconut paste)
Fried onion (for garnish)
Fried garlic (for garnish)

Instructions:

1. In a hot pot, heat 50 ml of coconut oil over medium heat.

2. Add the cinnamon stick, star anise, and cardamom pods. Sauté for about 1 minute until the spices are fragrant.

3. Add the chopped onions and cook until they turn golden brown, about 5-7 minutes.Stir in the ginger-garlic paste (GG phate) and sauté for 2 minutes, allowing the raw smell to dissipate.

4. Add the turmeric powder, chopped tomatoes, green chilies, salt, and chili powder. Cook for about 5 minutes, until the tomatoes soften and the mixture becomes aromatic.

5. Add the mutton pieces and cook until browned on all sides. Stir in the moong dal and cook for another 3 minutes, blending all the flavors.

6.Add the chopped coriander and mint leaves to the mixture and stir well.

7.Simmer and Cook the Rice

8. Pour in 2 liters of water and bring it to a boil.

9. Add the soaked broken basmati rice to the boiling water and cook for about 10 minutes, or until the rice is 75% cooked.

10. Stir in the (coconut paste) and mix gently to combine all the ingredients.
Garnish and Serve:

11. Cover the pot with a tight-fitting lid and reduce the heat to low. Let it cook for an additional 10-15 minutes to allow the rice to fully cook and absorb the flavors.

12. Once done, garnish with fried onions and fried garlic.

13. Serve hot, topped with extra fresh chopped coriander and mint leaves.
