Hello Donald, I'm from HK and for us Chinese we do fried eggs like this as well, just to make sure you are using a hot hot wok then it's very easy to get a super crispy fried egg. I'd recommend you to add sweet soya sauce or dark soya sauce next time. It tastes even more authentic and yummy! I love your shows, vlogs and your doggy. Way to go!

Sometimes I was wondering if you have Thai in your family ( or friends), because I saw many adapted version of Thai dishes from your channel. ( no claim, just curious) This fried egg with chili and spring onion plus oyster sauce, we do exactly the same in Thailand and it literally called " The bomb egg" since there is chili that will explode in your mouth. Love your inspiring and beautiful channel.

I learned yet another thing from this today. I have always used oyster sauce for stir fry cooking and always have at least one bottle on hand. Now I can use it on my eggs just like ketchup. It has made me happy and for tomorrow's brekkie, I plan to use this recipe. Thanks Donal!

Very nice quick dish Donal! I Love Eggs! I saw Jacques Pepin do something similar to this on his show once, but it came out looking like a fried poached egg. It looked delicious! TFS :D

Hey Donal! Love the look of the eggs! Instead of using oyster sauce, try Maggi Seasoning. It looks like a soy sauce bottle. If you Google it you'll find the picture. It's a lot better with these eggs in my opinion. It's a different salty flavour compared to oyster sauce but damn good. Cheers!
