Looks absolutely amazing!! I’m the odd guy who loves eating eggs, but hates the taste of them. So anytime I see eggs with something heavy in flavor like this is always a happy surprise.

For anyone that follows that recipe it is very good and I have never done it but just by looking at it I recognize how good it can be. However; He is correct that his recipe will never be a Michelin star dish.
However, If you are at home to get it at least halfway to Michelin star; just do several things. He obviously has not skinned the capcicums (peppers), and the eggs should be strained through a fine wire mesh colander. The onions should be a fine dice. And the potatoes should get a char, before being incorporated into the recipe.
And combine unsalted butter into the olive oil to fry the ingredients. That gives you the taste of butter with the high smoking point of the olive oil. I learned to cook on the job in high-end restaurants.
This gentleman I have to admit; he is a very good cook. But if he took certain steps to refine what he is doing, he would have an extraordinarily better kitchen.
