This is such an effective way to organize values for paintings! An important part of this approach is identifying the strongest contrast, the passage where a light and dark are placed next to one another with the greatest degree of difference between them. That is not necessarily going to always be the darkest dark against the lightest light, though it might sometimes be so. This helps "key" the greatest contrast so everything fits within the range of the medium, so nothing runs "off the scale"!
