DIY GYROS MEAT bc 1) I am a protein girlie through and through, 2) I love making big batches of meat to use in a million different ways during the week, and 3) this vertical spit is easy to use and it’s pretty darn genius. You can use it in so many ways (including the chicken gyros on my feed a few weeks ago!).

Makes 8 servings
1 lb ground beef (90/10)
1 lb ground lamb
1 red onion, finely grated
4 cloves garlic, mashed
3 tb olive oil
2 tsp cumin
2 tb dried dill
1 tb dried oregano
2 tsp kosher salt
1 tsp ground black pepper
Preheat oven to 375F on the convection setting. Add the beef and lamb meat to a large bowl, along with all of the seasonings. Use you hands or a spatula to ensure everything is combined. Grease a vertical spit. Form three balls of meat, pressing them together. Add a piece of foil on top. Place the spit in the oven on the lower rack. Bake for 45 minutes then remove from oven, baste with the juices and pop it back in the oven for another 40-45 min (until it reaches an internal temperature of 160F). Remove from oven and let sit for 20 minutes before slicing. Store meat in a covered container to enjoy in various ways during the week. Enjoy!
Note: You can also make this in a 9x5 loaf pan. If using loaf pan, transfer meat to the pan and press down (like a meatloaf). Cover with foil and bake for 45 minutes, then remove foil and bake for another 35-40 minutes. Remove from oven and let cool completely before removing from the pan and slicing. Use the juices at the bottom of the pan to pour on top.
