Is having the extracted text perform a python code (let's say get a receipt but just get the price) then would be subjected or directed to an excel file

Is is possible to make this extract certain text and categorize it? For example from a photo of an ID card. How can we program the ML Kit to look for a Name, for an Address or for a Birthday. That would make a nice video I think. Or do you have any suggestions on where to look for something like this?
