Seared Scallops on the Kamado Joe Using the Soapstone!

We show you how to get a great sear on scallops using the Soapstone on the Kamado Joe Big Joe!

• Started with 1 lb of sea scallops.
• Thawed them and tried to remove as much moisture as possible.
• Set up the Kamado Joe with an indirect side and the soapstone side. Running about 500 degrees and the soapstone was about 600 degrees.
• Sprayed the soapstone with Ghee for the oil.
• Seared the scallops on the soapstone for 1 minute each side and then 30 more seconds each side and removed them.
• Covered them until we were ready to do the taste test.

Summary: If you like scallops, this is a great way to get a great sear. I may bring the temperature up a little higher next time, but I had no issues with the taste these had!

How long at 450 do you need to heat up the soapstone?

Not a seafood guy myself but I grill it for my wife. Will have to try Scallops for herself.
