I’m from New Mexico. You should add some fresh chopped roasted green chile from Lemitar or Hatch, New Mexico. You will be amazed at the flavor of that meatloaf. It’s delicious.🤤

Try using salsa is you're pressed for time. No chopping or sauteing. It has the peppers, onion and tomato. Makes a delicious, moist meatloaf.
