Counted cross stitch. Diamond art. Can get kits for relatively cheap. Can even get personalized kits online. And u end up with a piece of artwork to hang. Also paint by number kits.

Knit or Crochet. I do not recommend kits for this especially if they are marketed for kids. But yarn and hooks/needles is all u need. U can also get books to learn how to do the different stitches or YouTube is free.

Sewing. Anything from garments to bedding to stuffed animals or quilting. It's gonna cost about $200 to $400 for a good beginner machine. But bonus is u can then repair your own clothes instead of throwing them away.

All of these can be done while u listen to music or watch a show.
