My mom used to make it when i was a kid . Brings back so many good memories. She would chill it then slice and fry it . Then we would eat it with butter a some kinda syrup... so good. This was sounds amazing too.... ✌️

In Romania we call that MĂMĂLIGĂ. It's a bit simple and we use it more as a garnish or instead of bread. With sarmale, with sausages, with fish...
Gordon, you should take a look in the Romanian cuisine. You will find a lot of delicious dishes.

In romania that can and does replace bread if you make it slightly thicker, no cheese, nor parsley. Just the cornmeal, salt, boiling water, and u get mămăligă

I really like the way you describe dishes. I think i tend to emulate you at my restaurant. One of the best experiences I've had was when a guest, in a snippity tone, asked me what a dish was. I then proceeded to give them an explanation of how the dish was conceived and what's in it. They were wowed.

And a tip for people that doesn´t know, rice and polenta, to not get your tongue burned up, you serve it making a hole in the middle like a ring, and you eat from the external borders, it cool down very fast to a reasonable temperature.

Good recipe. I actually like to make a entire meal that way. Just roast some veggies and chicken, add the soup and then the polenta/oats/bulgur/quinoa. I'd also add some more spices, like cumin, tomato paste and lemon. Very easy, versatile dish when you want a fast, fresh meal.
