Rambutans!!! I tried another novel dish out of these juicy rambutans, rambutan Jam! I followed the pineapple jam method and added the rambutans into the mixture. I know you will love this jam as it gives a very fruity subtle flavor mellowing the acidic taste of the pineapple. An ideal jam to spread on top of the steam cakes. It’s fascinating to look at the unusual color of the decorated butter cake with a layer of translucent crystal color jam and the red colored rambutan on top. I used beetroot juice to color the rambutan because it had given a beautiful red color with that sweet beetroot taste!
