Even without the history behind the mouth zip sign, no real person is going to grin and wink in the middle of a fight like that.
And...it kind of makes the scene awkward. The shapeshifter grinning and pulling on the book with both hands, and making no progress when Wendy lets go with one hand to do the sign.

Another good way they could've taken this scene was to have dipper take out the shapeshifter without any hints or hesitation.
When Wendy asks "How did you know who was the fake?", Dipper would go "I've had experience with duplicates before."
Then she'd be like "Wha?"
