I used to hate blue cheese also up until a few years ago. Personally, I think it’s meant to be paired with spicier flavors like mango habanero / Cajun as opposed stuff like dry rub. I like it with garlic parmesan!

Yeah blue cheese is mold, kimchi is lacto fermented, bread is made of yeast, and every single cheese is literally curdled milk. Micro organisms make food delicious. Not sure why mold is the only gross one.
