3 Generations of Buss Up Shut/Paratha Roti Makers in Trinidad & Tobago 🇹🇹 Foodie Nation

Randy Khan welcomes us into his family's home to demonstrate how their popular Buss Up Shut/Paratha is made from start to finish. For years, Randy and his family have worked tirelessly to keep his parents' tradition alive.

Watch closely as we see the intricate process of kneading the dough, preparing the butter/ghee, cutting the loyas into their classic cone shape, rolling out and finally, cooking the roti with a final 'buss up' before securing it in an air-tight cooler to keep it hot!

This is indeed a science and a legacy for them. Once on my way to Trinidad, I met a woman from India who expressed her love for the food made by the descendants of her people who came as indentured servants. She told me that there is a particular style of cooking from those people that no longer exists in India, hence the reason she loves and appreciates the food.
