Potjiekos: A South African Classic
Ingredients:
Meat: Beef, lamb, chicken, or venison, cut into small cubes
Vegetables: Potatoes, carrots, onions, butternut squash, cabbage, green beans, corn, and tomatoes
Seasonings: Salt, pepper, curry powder, paprika, cumin, and any other spices you prefer

Equipment:
Cast iron pot
Instructions:
Brown the meat: Heat the cast iron pot over medium-high heat. Add the meat, onions, and spices. Brown the meat on all sides.
Add water: Cover the meat with water up to the level of the meat.
Layer the vegetables: Start with the vegetables that take the longest to cook, such as potatoes and carrots, and layer them on top of the meat. Add the remaining vegetables in layers, ending with the softer vegetables like green beans and corn.
Simmer: Bring the pot to a simmer and then reduce the heat to low. Cover and cook undisturbed for 2-3 hours, or until the meat is tender and the vegetables are cooked.
Serve: Once cooked, remove the pot from the heat and let it sit for a few minutes before serving. Enjoy!
